About Previewers
Both preview tools do the same basic thing, which is render as you type. They exist separately because the two formats need different surroundings: prose needs a reading column, component markup needs a page with the stylesheet already loaded.
Rendering happens in your browser as you edit, so there is no publish step and nothing to save before you can see the result. That makes these useful as a scratchpad: paste something in, find out whether it looks right, throw it away.
Which One Should You Use?
Writing a README or a post
Use the Markdown preview. Side-by-side editing tells you immediately whether a nested list or a table will render the way you meant it.
Building a component
Use the component preview. Paste the markup and see it rendered live, which is faster than starting a dev server when you are trying three variants of a card.
